Our honey is left just as the bees created it. It includes all the pollen, enzymes and other good stuff God intended. We only strain it to remove extraneous bits such as wax. We do not pasteurize our honey.
In time raw honey will crystallize. This is natural and does not harm the honey in any way. You can reconstitute it by placing the bottle in water and gently warming it. BE CAREFUL! Heating in water above 110 degrees or in the microwave may change the color and taste of the honey. It may also kill the beneficial properties of the honey (not to mention, melt a plastic bottle!)
The color and taste of honey depends on what the bees eat. Our honey is light in both color and taste. Our bees feed in our clover field, our restored prairie and the neighboring farm fields.
Do not feed honey to infants under the age of one.
